Chocolate Mousse. It is chocolate, sugar, and eggs. You cannot go wrong. It is so good, and you can make it as simple or as fancy as you want. You can put it in fancy glasses, or eat it right out of the mixing bowl with your friend. I don’t know if you know this, but a perfect combination is pretzels and chocolate mousse.
I may or may not only have one photo and forgot to take one before it got eaten. But that’s neither here or there.
Preheat: as long as you have a fridge, you are good.
4.5 oz dark chocolate (although if you use milk chocolate I won’t tell)
0.3 oz unsalted butter
½ cup cream (I haven’t ever made this with a milk alternative)
3 tablespoons of white sugar
Separate eggs and yolks while the eggs are cold. Place the egg whites in a large bowl and yolks in a small bowl. Leave whites while you prepare other ingredients.
Melt chocolate and butter. Some people like to get all fancy and put a bowl on top of a pan and mix until melted. But I melted it in the microwave, in 30 second bursts. Stirring until smooth.
Beat cream until stiff peaks form. (Stiff peaks are when you mix and lift the mixer up and there is a little tail).
Add sugar. Beat egg whites until firm peaks form.
Fold egg yolks into cream using a spatula. (Pretend like you are folding a blanket)
Make sure the chocolate is lukewarm.
Pour chocolate into cream-yolk-mixture-thing. Fold through (I found 8 folds is perfect).
Add ¼ beaten egg whites into chocolate mixture. Fold!
Pour chocolate mixture into egg whites. Guess what we are going to do next, fold!
Then divide into fancy glasses or eat out of the bowl like I did.
